Salmon Poke Bowl

  • 1 cup uncooked rice 

  • 2 salmon filets

  • Any veggies of your choice:

  • Cucumber

  • Shredded carrot 

  • Avocado

  • Red cabbage

  • Greens

  • Sugar snap peas

  • Radish 

  • Sprint onion

  • Toasted sesame seeds 

Salmon marinade:

  • 1/3 C soy sauce

  • 1/4 C honey

  • 1 tbsp toasted sesame oil 

  • 1 clove garlic, minced

  • 1/2 lime, juices

Spicy mayonnaise:

  • 1/3 c mayonnaise

  • 1 tbsp sriracha 

  • (You can add a squeeze of honey and lime if desired)


Cook rice according to directions.
Marinate the salmon and bake on 180 for approximately  20 minutes
Spoon the warm rice into a bowl and top with the vegetables. Cut up the salmon into small pieces and place in bowl.
Drizzle with spicy mayo and top with sesame seeds.
